Maybe it’s the French blood pulsing through my veins but I love lavender. The colour, the fragrance, and the promise of calmness simply by smelling it, makes it pretty much the perfect blossom.
This year I’m growing lavender in my garden. As I Googled the instructions on how to ensure this plant thrives, I realized that I needed to cut off some of the blossoms.
I went to work and trimmed back the plant. However, I then began to wonder what I could possibly do with my first batch of lavender.
Then it dawned on me… memories of a French bakery that served lavender shortbread cookies. So I went to work.

Lavender Shortbread Cookies
Ingredients
- 1/2 cup + 1 Tbsp unsalted butter
- 1/2 tsp vanilla
- 1/4 cup + 1 Tbsp castor sugar *see notes
- 1 cup all purpose flour
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1 1/2 Tbsp fresh lavender flowers (rinsed and patted dry, pluck off buds)
Instructions
- Preheat oven to 350 F.
- Prepare lavender by rinsing and patting the flowers dry. Pluck off individual buds/petals (no stems) and set aside.
- In a large bowl, beat butter and vanilla until smooth.
- Mix in castor sugar.
- Sift flour, cornstarch and salt into the mixture.
- Add lavender buds and mix until evenly distributed.
- Form a large ball and chill dough in fridge for 20-30 minutes.
- On a lightly floured surface, roll out dough to about 1/4" thick and cut into 2" circles *see notes.
- Place cookies on a parchment paper lined cookie sheet.
- Bake for 10-12 minutes.
- Cool on wire racks.
EXTRA TIPS:
– Castor sugar can be made by placing regular white sugar in a coffee grinder and grinding for approximately 10-15 seconds.
– I used a biscuit cutter to cut my cookies. The heart pattern on the cookies was made by using a toothpick.

I’ve seen several recipes that include lavender as an ingredient on Pinterest. As much as I adore lavender, I have to admit that I just can’t wrap my head around using it in cooking but I would like to try it some time to prove myself wrong. : ) They certainly look yummy!!!!!! Have a great day!!

These sound delicious! I planted some lavender seeds this year but I don’t think I’m going to have any luck. I might just buy a small lavender plant next year to make sure it gets a good start. I love the little heart pattern on the cookies! So cute :)

Oh yummy! I’m also a big fan of lavender. A local ice cream shop makes lavender ice cream and it is my favorite summer treat. I’ll have to try these!
I am not familiar with lavender as an ingredient but this recipe sounds good. I am glad that you found a way to use the excess lavender flowers in your garden. Is castor sugar needed in the recipe or is it okay to use the confectioners’ sugar or powdered sugar? Thanks.
